Homemade Anchovy and Potato Pie.

Ingredients:
- About 1 kg of fresh anchovies (cleaned)
- Several potatoes
- Olive oil
- Fresh garlic (finely chopped)
- Fresh parsley (finely chopped)
- Fresh rosemary (finely chopped)
- Breadcrumbs (for topping)

Preparation:
- Preheat your oven to 180°C (350°F).
- Prepare the potatoes by either grating them or slicing them into thin rounds.
- Clean and prepare the fresh anchovies.
- Make the seasoned oil mixture by combining olive oil with finely chopped garlic, parsley, and rosemary.
- Take a baking dish, preferably a lasagna pan.
- Start layering:
- For the final layer, cover the top with the remaining seasoned oil and sprinkle breadcrumbs on top to add a crunchy crust.
- Bake in the oven for about 1 hour at 180°C.
- Let it cool slightly before serving.
Layering:

- Spread a layer of the olive oil and herb mixture on the bottom.
- Cover the oil with a layer of sliced potatoes arranged overlapping to cover the base.
- Add a layer of anchovies.
- Follow with another layer of potatoes.
- After each layer of potatoes, pour a drizzle of the flavoured oil and breadcrumb mix to absorb the oil.
