Homemade Anchovy and Potato Pie.

This recipe is simple but very flavorful. It takes a bit of effort because you need to prepare the potatoes and clean fresh anchovies, but the result is well worth it.

Ingredients:

  • About 1 kg of fresh anchovies (cleaned)
  • Several potatoes
  • Olive oil
  • Fresh garlic (finely chopped)
  • Fresh parsley (finely chopped)
  • Fresh rosemary (finely chopped)
  • Breadcrumbs (for topping)

Preparation:

  • Preheat your oven to 180°C (350°F).
  • Prepare the potatoes by either grating them or slicing them into thin rounds.
  • Clean and prepare the fresh anchovies.
  • Make the seasoned oil mixture by combining olive oil with finely chopped garlic, parsley, and rosemary.
  • Take a baking dish, preferably a lasagna pan.
  • Start layering:
  • For the final layer, cover the top with the remaining seasoned oil and sprinkle breadcrumbs on top to add a crunchy crust.
  • Bake in the oven for about 1 hour at 180°C.
  • Let it cool slightly before serving.

Layering:

  • Spread a layer of the olive oil and herb mixture on the bottom.
  • Cover the oil with a layer of sliced potatoes arranged overlapping to cover the base.
  • Add a layer of anchovies.
  • Follow with another layer of potatoes.
  • After each layer of potatoes, pour a drizzle of the flavoured oil and breadcrumb mix to absorb the oil.
